Recipe: The Ultimate Rainbow Cake


I have made my first ever rainbow cake - how exciting!

  

This was so fun to make for Easter and of course, I made this with none other than Claud. Also a little sidenote, we were feeling lazy so we bought vanilla cake mix from Betty Crocker’s. I love all of Betty Crocker’s cake mixes but obviously if you wanted to make it from scratch just search up any old vanilla cake recipe.

Vanilla cake:
 x2 Betty Crocker’s vanilla cake mix (plus required ingredients stated on box)
 Food colouring

Follow the instructions on the cake mix box or use your own vanilla cake recipe. Once your batter is done, split it into 5 equal bowls. Mix each batch with a different colour of your choice, we went for pastels for Easter but I think bright, vibrant colours would also look so lovely. Then pop each coloured batch into it’s own cake pan and bake at 160C fan forced until cooked through. I can’t say exactly how long your layer will cook for as it depends on what vanilla cake recipe you use and how much you make, but our ones took about 14 minutes. Once taken out of the oven let the cake cool for a while before taking it out of the pan and popping it onto a cooling rack. Repeat for all layers. 

Buttercream icing:
 150g butter
 2 cups icing sugar
 3 tbsp hot water
 1 tsp vanilla essence

Beat the butter until smooth and you should notice that the colour of the butter has turned paler. Gradually add in the icing sugar, hot water and vanilla essence whilst using an electric whisk to mix it all together. It will be done when the icing is a light and fluffy consistency.

Once all your cake layers have cooled and your icing is done, it’s time to assemble your masterpiece! In between each layer slather on some buttercream icing to stick the layers together. You may have to trim the tops of your cake layers to make sure the surface is flat. Once done, do a light coat of icing around the cake, and let to set in the fridge for about 20 minutes. This sets the crumbs and will make it easier for you to cover the cake in icing. After, continue icing your cake. As you can probably see in the photos, you can still see a slight hint of colour through the icing which we don’t mind, but if you want all the colour absolutely gone continue icing and then letting it set until there’s no sign of any colour (although it will be very time-consuming!).

Then, you’re done. And I have to say, congratulations on persevering through because it does take a very long time!
