Tuesday’s Treat: Crispy & Chewy Chocolate Chip Cookies

Today I’m going to share with you all the best chocolate chip cookie recipe ever. I have made quite a few cookies in my lifetime, using different recipes however this is by far the best. These cookies are crunchy on the outside but chewy on the inside. Enjoy the first Tuesday’s Treat recipe!

Recently I’ve been really into baking and cooking so I’ve got a lot of recipes lined up to share with you all! I’ve now created an exciting new baking series called “Tuesday’s Treat” which will be (mostly) baking recipes posted on Tuesdays hence the name, although for those of you in NZ or Australia it'll be Wednesday because of the time zones. This is a series which has more simple recipes and requires ingredients you most likely already have, rather than more complicated recipes which will take more time and needs ingredients you probably will have to go out and buy (these sorts of recipes will just be under "Recipe"). This series is basically just something you could do after school to treat yourself but it’s homemade which is always the nicest and super easy and quick too.

Chocolate Chip Cookies:
 100g butter
 1/3 cup brown sugar
 1/3 cup white sugar
 2 tsp vanilla essence
 1 egg
 1 2/3 cup plain flour
 1/2 tsp baking soda
 1/4 tsp salt
 chocolate chips or chocolate chunks

Preheat your oven to 180C and grease your oven trays. Soften the butter and pop it in your mixing bowl with the brown and white sugar. Beat together with an electric whisk until the mixture becomes creamy. Add in the vanilla essence and egg and continue beating until it’s all mixed through. Sieve in the flour, baking soda and salt and mix with a wooden spoon or a silicone spatula (they’re so good when baking). Then mix through a generous amount of chocolate chips. Roll the dough into small balls about the size of a teaspoon to a tablespoon, depending on how large you want your cookies to be. Pop it into the oven for 7-10 minutes until golden. Use a spatula to transfer them onto a cooling rack and whilst cooling it should firm up a bit.

Enjoy with a cup of tea or a glass of milk. Also another delicious and super easy way to eat your cookies is in an ice cream sandwich! Simply get a large scoop of ice cream and wedge it in between two cookies.

Just a pre-warning these are so addictive! I ate the entire batch of cookies in one day. Oops.

  1. Yum yum yum! I love using big blocks of chocolate and cutting it up into chunks rather than using chocolate chips - they're just so much more satisfying haha
